What makes Hot Sauces different?

There are a lot of hot sauces that are similar, like Tabasco. I looked at the ingredients for it and all there is is Distilled Vinegar, Red pepper, and Salt. There's got to be at least 10 other hot sauce manufacturers that use red pepper, so what makes hot sauces different? they all have the same ingredients: distilled vinegar,pepper,and salt. So they should all taste the same
